Pancakes Recipe
A potato pancake, also known as a latke, is a type of

1 pound of potatoes
1 small onion
1 egg
2 tablespoons of all-purpose flour
2 tablespoons of vegetable oil

Peel and grate the potatoes and onion using a cheese grater.
In a large bowl, mix the grated potatoes and onion with the egg, flour, salt, and pepper.
In a large skillet, heat the oil over medium heat.
Drop spoonful’s of the potato mixture into the skillet and flatten them slightly with a spatula.
Cook the pancakes for 3-4 minutes on each side, or until they are golden brown and crispy.
Serve the pancakes hot, with sour cream or applesauce on the side.
